Ok, by now you are probably wondering why the heck the majority of things I make are in the microwave. Well, a few reasons. One of them is that I get impatient ad when I want cake, I want it now. So, I wanted a chocolate chunk cake asap, and out came this vegan chocolate chunk protein mug cake.
Another reason for all the microwave recipes is that, yes, my oven still is broken. If I can’t bake my cake, I am sure as heck still going to make it somehow, so the microwave came in handy.
The final reason for all these cake recipes is that I was lucky enough to get a nice package of assorted protein cake mixes from Lil Buff. They sent me a pumpkin flavor, blueberry flavor, and this, Un-Chunky Chip Vegan Protein Cake mix.
I’ve had to keep it a bit of a secret until now because it wasn’t released for the few weeks I have had it and been experimenting with it. Well, now that it is released, I can share this recipe with all of you guys!

Description
This recipe is the perfect, quick and easy vegan chocolate chunk protein cake topped with a drizzle of vegan dark chocolate, coconut, and peanuts.
Ingredients
Cake
1 package Lil Buff Un-Chunky Chip Vegan Protein Cake Mix
2 tbsp. almond milk*
Toppings
1 tbsp. vegan dark chocolate, melted
1 tbsp. shredded coconut
1 tbsp. crushed peanuts (or almonds, walnuts, etc.)
Instructions
Add cake mix and almond milk to a small bowl. Mix until a smooth better is formed.
Spray a ceramic mug with nonstick spray. Pour batter into mug. Microwave for 45 seconds. Check, if needed microwave for another 10-15 seconds.
Alternatively, you can bake it at 350F for about 12-15 minutes.
Top cake with melted dark chocolate, shredded coconut, and crushed peanuts. Enjoy!

*Can also use water, cashew milk, coconut milk, or other dairy free alternative.
