I love chocolate, I love cookies, and I love desserts that are gooey. This chocolate chip protein cookie dough pretty much checks off all those delicious boxes!
The other day, I had a hard interval workout on the bike. I rode with a few friends from Rollfast, and we decided to stop for a post ride coffee and snack at the coffee shop. I had an americano and a big chocolate chip cookie. I dipped the cookie in the coffee which is a game changer if you’ve never dipped pastries in coffee! Anyway, that chocolate chip cookie had me craving cookie dough afterwards so I decided to make this.
If you are like me, you love to lick the spoon and eat the extra batter from the cookie dough when making cookies. However, not only is it super sugary and unhealthy, it’s not exactly ideal with the raw egg in it. Well, you don’t have to worry about that anymore with this recipe. Nothing raw in it and completely safe to eat, and not to mention the fact that it’s super healthy.
The base is made with chickpeas/garbanzo beans and oats. Those helped add fiber and some protein. Then I added vanilla protein powder, honey, a little bit of almond milk and chocolate chips. It’s quick, easy and super delicious! I also used Legendary Foods Pecan Pie Almond Butter, which might be the best tasting almond butter I have ever had.

Description
This is a thick and gooey no-bake chocolate chip cookie dough packed with protein and fiber so you can feel good about eating spoonfuls of cookie dough!

Ingredients
1 can garbanzos beans, drained and rinsed
1 cup oats, old fashioned or quick
1/2 cup Legendary Foods Pecan Pie Almond Butter
3 scoops vanilla whey protein powder
2–3 tbsp. honey*
1 tbsp. milk (I used unsweetened almond)
1/2 cup dark chocolate chips
Instructions
- Make sure garbanzos beans are drained and rinsed well. Add beans, almond butter, honey, and milk to a food processor. Blend until smooth.
- Add oats, protein powder, and flavor powder (or just protein powder). Blend again. Batter should be thick and sticky now, and there will be some oats still not blended all the way, that is ok.
- Take cookie dough out of food processor and transfer to a large bowl. Add chocolate chips. Stir in until combined.
- Eat on toast, pancakes, on a spoon, or however you like! Enjoy!
Notes
*Start with 2 tbsp. of honey, and if you like it a little sweeter add an extra tablespoon.
