S’mores Protein Brownies

Description

Dense s’mores protein brownies that will remind you of sitting around the camp fire and eating s’mores. Milk chocolate, marshmallows and graham cracker are combined to make the best protein brownies.

Ingredients

  • 1 cup (124g) whole wheat flour
  • 1 scoop (31g) MusclePharm chocolate casein protein
  • 1 scoop (35g) MusclePharm chocolate milk combat protein powder
  • 1/2 cup granulated stevia in the raw, or erythritol
  • 1/4 cup (20g) unsweetened cocoa powder
  • 4 graham cracker sheets (70g)
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. baking powder
  • 1/8 tsp. salt
  • 3/4 cup unsweetened almond milk
  • 1/2 cup (113g) plain nonfat Greek yogurt
  • 1/4 cup pure maple syrup*
  • 2 large whole eggs
  • 3 tbsp. (42g) Amber Lyn Chocolates milk chocolate chunks
  • 1 tsp. vanilla extract
  • 1 graham cracker cracker sheet (18g)
  • 1/2 cup (25g) mini marshmallow bits

Instructions

  1. Preheat oven to 350F. Blend or mash 4 graham cracker sheets into a flour consistency. Mix whole wheat flour, graham cracker flour, protein powders, stevia/erythritol, cocoa powder, cinnamon, baking powder, and salt in a large bowl.
  2. In a separate large bowl add almond milk, greek yogurt, maple syrup,eggs, and vanilla extract. Whisk together until combined. Microwave chocolate chunks in a small microwave safe bowl for about 30-60 seconds or until melted. Pour melted chocolate into wet ingredients and mix again until combined.
  3. Add 1/2 of dry ingredients to wet and gently mix until combined. Add remaining 1/2 of wet ingredients and mix again until combined. Be careful not to over mix. Batter will be thick.
  4. Pour batter into a greased 6×8 baking dish. Sprinkle mini marshmallow bits evenly on batter. Slighlty press down into the batter. Crumble up 1 graham, cracker sheet. Sprinkle evenly on top.
  5. Bake for about 25 minutes or until a knife comes out clean. They might seem little under done, but they will firm up after they have been out of the oven and cooled. Let cool for about 15-20 minutes on a cooling rack. Slice into 8 large brownies and enjoy!

Notes

* The maple syrup can be substituted for honey or agave. I have not tried sugar free syrup to know how it would turn out.
