Description

Fluffy chocolate protein pancakes layered with strawberry greek yogurt. Topped with strawberries, dark chocolate sauce and chocolate brownie coconut butter.

Pancakes

  • 1/2 cup (57g) Kodiak Cakes pancake and waffle mix
  • 1 tbsp. (5g) unsweetened, dark cocoa powder
  • 1 1/2 tbsp. granulated stevia or erythritol
  • about 1/2 cup water (more or less depending on how thick you like your pancake batter)

Dark Chocolate Sauce

  • 1 tbsp. (5g) unsweetened, dark cocoa powder
  • 1 tbsp. granulated stevia or erythritol
  • 2 tbsp. sugar free maple syrup

Extra Toppings

  • 1 container (150g) strawberry Greek yogurt
  • 1 tbsp. (16g) Sweet Spreads chocolate brownie coconut butter
  • 1/3 cup sliced strawberries

Instructions

  1. Preheat pan or griddle to medium/high heat. Add kodiak cakes mix, cocoa powder, and stevia to a medium bowl. Add water and mix. Use more or less water depending on how thick you want your pancake batter to be.
  2. Spray griddle with nonstick spray. Spoon batter onto griddle to make Cook for about 2-3 minutes per side.
  3. Mix cocoa powder, stevia and sugar free maple syrup. Layer pancakes with strawberry Greek yogurt. Drizzle with chocolate sauce and chocolate brownie coconut butter. Enjoy!
