Ok you guys. This seriously may be my favorite recipe to date. I think it is tied with my protein chocolate peanut butter black bean brownies. Anyway, as I am in love wit pretty much anything peanut butter, I made this
PEANUT BUTTER COOKIE PROTEIN PIE.
The inspiration comes from my Grandma’s Peanut Butter Pie recipe I posted a while back. It is amazing. Possibly my favorite dessert of all time, but I wanted to try and make it more macro-friendly, so I came up with the peanut butter cookie protein pie.
Reduced Fat Graham Cracker Crust
One of the first ways I reduce the calories on this recipe is by using a reduced fat graham cracker crust. My grandma uses a regular flour + butter pie crust which is much more calorie dense. The graham cracker crust can be found pretty much at any grocery in the baking aisle!
Peanut Butter Cookie Filling
Next, what you all have been waiting for, that peanut butter cookie filling. This is where most of the calorie savings comes from. The regular recipe has a 1 whole cup of peanut butter, 3 egg yolks, 2 cups of sugar, and a cup of white flour. Yes, it tastes amazing but not exactly good for the waistline!
This healthy, protein packed peanut butter protein pie filling is made with:
- greek yogurt
- casein protein powder
- peanut flour
- Protein Cookie Butter powder
- sugar free vanilla pudding mix
- regular creamy peanut butter
- protein peanut butter (could use all regular or all protein peanut butter)
So, from all of that, each slice has a whopping 27 grams of protein. Would you rather have 1.5 bland protein bars or a slice of protein peanut butter cookie pie? I’m taking pie every time!
Refrigerate to set up!
Once the filling is made, pour it into the graham cracker crust. I let mine sit in the fridge overnight, then put it in the freezer for about 30 minutes before cutting. Freezing makes it a bit more firm to hold up better when cutting.
Lastly, pie toppings!
This part is optional, but as you can tell, I tend to go overboard with just about everything. I topped it with a drizzle of cookies & cream Protein Cookie Butter, some crushed Oreo cookies, and finally some Reese’s peanut butter chips. Now that is how you do a protein peanut butter cookie pie!

The creamiest, healthiest, protein packed peanut butter pie you could ever imagine! This easy, no-bake peanut butter cookie protein pie has 27 grams of protein per slice!

- In a large bowl, add peanut flour, cookie butter powder, pudding mix, protein powder, and salt. Mix until combined.
- Next, add almond milk and Greek yogurt. Whisk until a smooth, thick mixture begins to form. It should have the consistency of pudding.
- Finally, add peanut butter (it is easier if heated in microwave slightly to make it easier to mix). Whisk vigorously until all is incorporated.
- Pour batter into the graham cracker curst. Place in the fridge over night to set up. It also helps to place in the freezer for 15-20 minutes before slicing so it is a little bit more firm. Slice into 8 pieces.
- Top with protein chocolate cookie sauce. Mix chocolate protein cookie butter powder, Greek yogurt, and almond milk. Drizzle over top of pie.
- Top with crushed cookies and peanut butter chips if desired. Enjoy!
Notes
*Must use casein protein powder. Whey protein powder absorbs liquid differently and will not end up with the same consistency as casein.
